“Skopas is an addictive popped mielie snack – similar to popcorn – covered in multicolored powdered sugar and sold on many street corners in SA. Here, it’s swirled through a basic vanilla ice cream base – think caramel-popcorn ice cream, but way more fun. I’m not sure if anyone has done this with skopas before, but I’m feeling very much like a pioneer right now.
INGREDIENTS
4 cups Woolworths whipping cream
2 x 385 g cans of condensed milk
1½ t vanilla extract
110 g skopas, plus extra for serving
2 T rainbow vermicelli
COOKING INSTRUCTIONS
1. Using an electric beater, whip the cream until soft peaks form, taking care not to overbeat. Add the condensed milk, whisking continuously, then add the vanilla and beat until stiff.
2. Stir in the skopas and vermicelli. Freeze in a freezer-safe container (this would be a good time to repurpose that empty ice cream container!).
3. To serve, scoop into bowls or sundae glasses and sprinkle with extra skopas. The skopas can be replaced with caramel popcorn or you could even use your favorite childhood cereal.
